Bacteriocin Production & Parameters Optimization

Bacteriocin is an antimicrobial peptide synthesized by bacteria through ribosomes. It generally acts on the cell membrane of the target strain and can inhibit the growth of other bacteria with similar classification status by destroying the structural integrity of the membrane and causing leakage of cell contents, thus leading to bacterial death.

Bacteriocin can be derived from a wide variety of sources, such as gram-positive bacteria (G+), gram-negative bacteria (G−) or some ancient bacteria, such asEscherichia coli, Bacillus subtilis, Mutans streptococci, Streptococcus sanguis and lactic acid bacteria.
