Bacteriocin is an antimicrobial peptide synthesized by bacteria through ribosomes. It generally acts on the cell membrane of the target strain and can inhibit the growth of other bacteria with similar classification status by destroying the structural integrity of the membrane and causing leakage of cell contents, thus leading to bacterial death.
Bacteriocin can be derived from a wide variety of sources, such as gram-positive bacteria (G+), gram-negative bacteria (G−) or some ancient bacteria, such asEscherichia coli, Bacillus subtilis, Mutans streptococci, Streptococcus sanguis and lactic acid bacteria. There are nearly thousand land source bacteriocins have been found and streptococcus element (Nisin) is the most thorough research bacteriocin, because of it has recognized the GRAS (Generally Regarded as Safe) properties.

Bacteriocin growth usually follows a major metabolite growth-related kinetics that occurs during the exponential growth phase and stops once the stationary phase is reached. This means that the production of bacteriocins depends on the total biomass of the bacteria.
